Tasting Notes

Wild and stony on the nose, with purple flowers, blackberry jam, black cherry bark and sarsaparilla, a hint of wintergreen, acacia, and birch. The color is strikingly deep for a Texas blend, as is the palate. Full-bodied, grippy tannin texture, and sophisticatedly smokey.

Winemaking

Fermented separately in large oak fermenters for an average of 10 days. Aged in 20% new French oak barrels and 80% neutral oak barrels for 30 months.

Food Pairing

Pair with smoked or grilled meats and vegetables, with black pepper spice, or sharp cheeses.

The Vineyard

Established in 2015 in Mason County around his home, owner and vineyard manager William Blackmon planted what he loves - Cabernet Sauvignon, Merlot, Malbec and Petit Verdot. These "Bordeaux" varieties thrive on the slightly sloping, poor soils of Blackmon Ranch that also reflect sunlight onto the grapes to increase intensity. The subtle variations in the vineyard's terrain offer a layered effect in the resulting wines. Soil: poor, shallow soils; sandy loam over clay to sandstone. Elevation: 1,800 ft.
