We’re setting the table at the Hye Estate and inviting you to a special Winemaker’s Dinner on Friday, November 14, at 6:30 PM. Chef Josh Tye will craft a family-style wild game meal, and our team will pour a line-up of William Chris wines that bring the Hill Country to your glass.

This is the kind of evening we love—good food passed around the table, stories shared, and Texas wine right where it belongs.

Hill Country Greens
Local mixed greens, Honeycrisp apples, roasted pecans, CKC goat cheese, farro, pickled red onion, and maple Dijon dressing

Herb-Rubbed Seared Bandera Quail
Semi-boneless quail, seasoned and seared to perfection

Slow Mesquite-Smoked Venison Leg
Served with wild blueberry demi and fire-roasted onions

Roasted Root Vegetables
Finished with a chili honey glaze

Pimento Mac & Cheese
Topped with wild boar ragu

Persimmon Spice Cake
Nutmeg whipped cream and rum anglaise

Full Refund – Anytime 10 days before the event.
· Partial Credit Issued – If a request to cancel occurs between 72 hours and 10 days in advance of the event, we will not refund but can issue a 50% credit to the member/guest account to go towards a future purchase. The additional 50% is retained for administrative and/or food expenses.
· No Refund – 72 hours in advance. No credit for purchase will be issued.

Please be advised of the following policies regarding dietary allergens for our upcoming dinner events:

Plated Dinners: Shellfish and nut allergies will be accommodated.

Family Style and Seafood Dinners: Due to the nature of these meals, we are unable to accommodate any dietary allergies.

Notification Requirement: All allergies must be submitted no later than seven days prior to the event. We regret that we cannot accommodate requests made after this deadline.We appreciate your understanding and cooperation.
