Tasting Notes

Delicate and fruity on the nose with a soft toast and cream quality from lees aging. The palate is light-bodied with a stony minerality that is classic from this region. An edge of salt compliments melon rind notes and begs for food. Ultra Brut.

Winemaking

Picked early for freshness. Aged in 40% neutral white barrels and 60% stainless steel tank prior to blending. Fermented a second time in bottle with 16 months on the lees. Disgorged on 5/9/25 with 5 g/L of dosage with fortified Muscat of Alexandria dessert wine. Method: Traditional. Dosage: Ultra Brut. Closure: Mushroom cork and cage.

Food Pairing

Pair with salty snacks, spring salads and light seafood dishes such as oysters or a delicate flake fish.

The Vineyard

Dell Valley Vineyard Hudspeth County — outside any designated AVA This vineyard was originally planted in 1987. The vines at Dell Valley Vineyard are thick and deeply rooted in the sloped sandy, caliche type soils of West Texas. Sitting outside of any currently designated American Viticultural Area, this vineyard is mightily tended by Phillipe, whose experience with growing grapevines began at an early age on the French island of Corsica.
