Tasting Notes

Sweet honeysuckle and melon on a dry palate. Aromas of lemon candy and leaves in the Fall comes together to create a sincerely unique wine. The palate begs for food, with a limestone tartness, which also lifts the wine off of the palate so that it remains light and airy.

Winemaking

Fermented in large neutral oak fermenter for 31 days. Aged in primarily large neutral oak fermenter and just 5% new French oak barrel for 6 months. 

Food Pairing

light fish with a squeeze of lemon, shrimp ceviche, or chilled noodle dishes with kimchi.

The Vineyard

La Pradera

AVA: Texas High Plains

Established in 2010 by Mike and Barbara Paddack with the help of Texas grape growers Andy and Lauren Timmons, who also currently manage the 120 acres. The 13 different grape varieties are planted on a special calcareous soil combination, organic, sandy loam over limestone that is just 2-3 feet deep in some blocks. The wines are aromatic and fresh in style.
