Fermented in large oak fermenter before putting down into barrel. Aged for 18 months in all neutral oak oak barrels to show off terroir.

Serve at 60°F | Decant gently

A fine cheddar cheese or a Filet Mignon.

Hye Estate was planted in 2012 on seven of the 26 acres of William Chris Vineyards in the city of Hye. Previously home to a family with a generous turkey population, the land is now a uniquely nitrogen-rich, clay-dried river basin over limestone bedrock. Hye Estate has been dedicated since established to the grapes that are successful in the southwest of France.
