Tasting Notes

Ripe purple plum, with notes of chocolate, black bramble berries, cedar, cigar box, violets, dessert sage, and flint. Generous tannins and a velvety mouthfeel.

Winemaking

Fermented in large neutral oak fermenter.

 

Aged partially in large oak fermenter and neutral barrels for 6 months before blending for further aging in 30% new French oak barrels for 10 months.

Food Pairing

USDA Prime Rib served with au jus, horseradish cream, and garlic mashed potatoes.

Hunter Vineyard was originally planted to Cabernet Sauvignon in 1986, ten  years later Merlot was added, and two years later Merlot replaced the Cabernet Sauvignon vines completely. Alongside these grapes from 20+ year old vines are more Merlot, Malbec and Cabernet Sauvignon from the surrounding vineyards and soils of Terry and Hockley County.
