Tasting Notes
Just barely touching on medium-bodied, this is your classic dry Texas Sauvignon Blanc: medium aromatic intensity led by herbs and citrus, and an unctuous, mineral palate.
Winemaking
Sauvignon Blanc fermented in large oak fermenter; Semillon fermented in neutral barrel. Aged 8 months: Sauvignon Blanc in oak fermenter and concrete, Semillon in neutral barrel on bâtonnage.
Food Pairing
Texas chèvre with a drizzle of Texas honey on a Texas seed cracker.
The Vineyard
Hudspeth County
Planted in 1987, the over 34-year-old Sauvignon Blanc vines at Dell Valley Vineyard are thick and deeply rooted in the sandy, caliche type soils of Texas. Sitting outside of any currently designated American Viticultural Area, or AVA, this vineyard is mightily tended by Phillipe, whose experience with growing grapevines began at an early age on the French island of Corsica.
Dell Valley Vineyard, Hudspeth County. Age of Vines: 35 years. Soil Type: Sandy loam over caliche soil. Elevation: 3,200-7,500 ft.
