Tasting Notes
Dry, crisp, and fruit-forward, this light-bodied rosé has an aromatic power that carries its complexity outward. Green pepper tones, florals, and stone are all there to discover.
Winemaking
Direct press. 45 day fermentation separately in stainless steel tanks. Blended and aged together in stainless steel tanks for 5+ months.
Food Pairing
Quiche Lorraine with a homemade flaky pie crust and a sprinkling of salt on top.
The Vineyard
AVA: Texas High Plains
Established in 2010 by Mike and Barbara Paddack with the help of Texas grape-growers Andy and Lauren Timmons, who also currently manage the 120 acres. The different grape varieties are planted on a special soil combination that is calcareous, organic, sandy loam over limestone that is just 2-3 feet deep in some blocks. The wines are aromatic and fresh in style.
