Tasting Notes
Medium-intensity straw in color. Notes of cotton blossom, ripe lemon, green apple skin, apricot, honeysuckle, serrano, sour punch straw, and chalk. Bright acidity, sea salt, vanilla, pink grapefruit, serrano pepper.
Winemaking
Fermented in large 50 HL oak fermenters with 3-4 weeks bâtonnage, then aged in stainless steel for 5 months.
Food Pairing
Shrimp, smoked salmon and dill cream, seared swordfish with spicy chimichurri, and Grana Padano or other aged Italian.
