Tasting Notes
Notes of mulled cranberries, dried orange peel, thick wafts of dried lavender, clove and brûlée, black cherry pit and smoke. The palate is fruity, with a pleasant creamy-yet-pliable palate that swishes like silk. Soft tannins lift the wine off the palate before the coating finish.
Winemaking
Varities: 67% Carignan, 33% Grenache
All fermented in stainless steel tanks for about 18 days on the skins. Aged for 26 months in 10% new French oak barrels, 5% E. European oak barrels and 85% neutral oak barrels.

The Vineyard
AVA: Texas High Plains
Established in 2010 by Mike and Barbara Paddack with the help of Texas grape-growers Andy and Lauren Timmons, who also currently manage the 120 acres. The different grape varieties are planted on a special soil combination that is calcareous, organic, and sandyloam over limestone, which is only 2-3 feet deep in some blocks. The wiens are aromatic and fresh in style.
Elevation: 3,300 ft. Soil: Amarillo fine sandy loam over limestone base. Vines established in 2010.
