Winemaking
Fermented in large oak fermenter for 15 days. Aged in 50% new French oak barrels and 50% neutral oak barrels for 16 months.

Pair with heavy game such as bison or lamb, hearty beef dishes or earthy dishes such as with farro.

Sourced from Dell Valley Vineyard, owned by the Philipe family in Corsica and continuously planted since 1987 in Hudspeth County, Texas. The vineyard sits outside of any currently designated American Viticultural Area.
Dell Valley Vineyard, Hudspeth County, Texas — outside of any currently designated AVA. Age of Vines: 13 years. Soil Type: Sandy loam over caliche with river rock. Elevation: 3,750 feet.
