Tasting Notes
Stewed strawberries, soft flowers, orange zest, and pretty herbs like thyme. This wine smells like a fresh breeze in Springtime. The palate is full-bodied with a stoney through-line packed with ripe fruit and just a hint of sweetness for balance. Ultimately dry, with tea-like tannins and a tart kiss.
Winemaking
Fermented in a mix of stainless steel and oak fermenter for an average of 12 days. Aged for 28 months in 20% new French oak barrels and 80% neutral French oak barrels.
Food Pairing
Pair with a cheddar-bison burger, ricotta cheese, mozzarella and basil on a pizza, or braised meats.
The Vineyard
91% Sangiovese, 9% Malbec from a blend of vineyards: Lahey Vineyards, Twin T Vineyard, Alta Loma Vineyard, and Letkemen Vineyard. AVA: Texas High Plains. The Texas High Plains is the second largest designated grape-growing region in Texas, spanning 8 million acres, yet it is responsible for the majority of the wine grapes grown in the state. A rare set of growing conditions make this area unique. On a vast flat plain, the vineyards reach elevations of 3,000 to 4,500 feet, resulting in very balanced wines.
Elevation: 3,000-4,500 ft. Soil: Fine sandy loam over some clay and limestone base. Age of vines: 4-13 years.
