2020 Single Barrel

Incredible color. Fresh cherries, kirsch, black wild berries, sour raspberry, licorice jam, mocha, lingonberry, fresh cream, black cherry, sweet & sour palate, soy, savory, damp earth, blackberry syrup. Medium tannin, fruity, complex finish, with a lingering back end of strawberry rollup and stone.

The Cabernet Sauvignon fermented in oak fermenter for 10 days, then aged in 100% new French oak barrels for 18 months. The Syrah fermented in oak fermenter for 21 days, then aged in 100% neutral oak barrels for 18 months.

Pair with decadent and smooth dark chocolate, coffee rubbed steak, kirsch-glazed boar, and other powerful bittersweet dishes.

Texas High Plains AVA. Sourced from Paka Family Vineyard and Hoss Fly Vineyard. The Texas High Plains is the second largest designated grape-growing region in Texas, spanning 8 million acres, yet it is responsible for the majority of the wine grapes grown in the state. A rare set of growing conditions make this area unique. On a vast flat plain, the vineyards reach elevations of 3,000 to 4,000 feet, resulting in very balanced wines.

Elevation: 3,000-4,000 ft. Soil: Fine sandy loam over some clay and limestone base. Age of vines: about 7 years.
