Tasting Notes
Chocolate and charred marshmallow evoke a cool night out by the fire, complete with grilled plum notes. Around this core dance playful aromas of dragonfruit, rhubarb pie, mint and stone. The palate dances with extravagant tannins, coating yet soft and gently gripping. Rich.
Winemaking
Fermented in oak fermenter for 14 days. Aged in 100% neutral oak barrels for 18 months.
Food Pairing
Pair with heavy gamey meats like bison, creamy-earthy blue cheeses, and well-seasoned lamb meatballs.
The Vineyard
Hye Estate Vineyard, Texas Hill Country AVA. Hye Estate was planted in 2012 on seven of the 26 acres of William Chris Vineyards in the city of Hye. Previously home to a family with a generous turkey population, the land is now a uniquely nitrogen-rich, clay dried river basin over limestone bedrock. Hye Estate has been dedicated since established to the grapes that are successful in the southwest of France.
Elevation: 1,450 ft. Soil: Riverbed, limestone, nitrogen rich. Vines planted in 2012.
