Tasting Notes

Rosebushes and red berries push out of the glass with an intriguing savory spice and the juicy hint of bubblegum. The palate immediately satisfies the intrigue on the nose, coating the mouth with lush fruit and texture, but lifting off to reveal a wide array of wilting garden herbs and wild raspberry notes. Silty tannins on a medium body. Dry.

Winemaking

Varieties: 75% Sangiovese, 20% Cabernet Sauvignon, 5% Mourvèdre 

Fermented in stainless steel tank and large oak fermenter. Aged in separate lots for 10 months, then blended just before bottling. 

Serve at 59°F | Decant

ABV: 14.1% | pH: 3.72 | TA: 6.25 g/L | RS: 1.12 g/L 

Food Pairing

delicate beef carpaccio, earthy mushrooms, and a nutty washed-rind cheese.

The Vineyard

AVA: Texas High Plains

The Texas High Plains is the second-largest designated grape-growing region in Texas, spanning 8 million acres, yet it is responsible for the majority of the wine grapes grown in the state. A rare set of growing conditions makes this area unique. On a vast flat plain, the vineyards reach elevations of 3,000 to 4,000 feet, resulting in very balanced wines. 

La Pradera Vineyard, Alta Loma Vineyard, Texas High Plains AVA. Age of Vines: 7-13 years. Soil Type: Brown clay-ey loam and reddish fine sandy loam with some limestone. Elevation: 3,200-3,300 ft.
