Tasting Notes
Very pale in color and low in alcohol (10.5% abv), this wine is shockingly unctuous for a light-bodied rosé! The wine is dry with bright acidity, entirely balanced by fruitiness and the texture provided by concrete aging. Peach, cherry, herb, and mineral all linger on the dry finish.
Winemaking
Harvested very early. Pressed gently in the cooler temperatures of the early morning in a basket press. Fermented in concrete tank and aged in the same vessel for a brief 7 months.
Food Pairing
Pair with salads with vinaigrette, seafood dishes, and spicy cuisine. Also, juicy, richer meats like pork.
The Vineyard
Uplift Vineyard. Formerly Hoover Valley Vineyard, this site was renamed both to represent the spirit of our industry and the ancient geographic feature known as the Llano Uplift. This feature was born of magmatic eruption and erosion that over time exposed the pink granite “dome.” The 55 acres of 13 different southern French and Italian grape varieties were planted amongst the granite starting in 2013.
Uplift Vineyard, Burnet County. Age of Vines: 12 years. Soil Type: Decomposed granite and sandy loam. Elevation: 860 ft.
