Tasting Notes
A nose of blackberry jam and cream, indulgent ripe fruit, bell pepper, wild berry bushes, wintergreen, and peach preserves. The palate is as juicy as you would expect, with a full body, solid tannin structure, and loads of depth that will expand with age.
Winemaking
Fermented in stainless steel for 12 days. Aged for 26 months in 100% neutral French oak barrels.
Food Pairing
A juicy wine is matched by incredibly flavorful gamey meats with a braised, stewed, or cream component.
The Vineyard
Dell Valley Vineyard, Hudspeth County. Continuously planted since 1987, the vines at Dell Valley are deeply rooted in sloped sandy, caliche soils at over 3,500 ft elevation, sitting next to vast alfalfa fields outside of any currently designated American Viticultural Area. The vines are mightily tended by Philipe, whose experience with growing grapevines began at an early age on the French island of Corsica.
Elevation: 3,650-5,000 ft. Soil: Sandy loam over caliche soil. Age of vines: 5 years.
