Tasting Notes

Aromatically profound, with dried cranberry, cherry, clove, raspberry coulis, leather, white pepper-dusted violets and earth, all carrying through on the palate. Medium to full-bodied with a more pronounced, firm tannin structure than the 2020 and deeper layers of berry flavours. Winemaking

Variety: 100% Tannat

Fermented in large oak fermenter for 17 days. Matured in 100% neutral oak barrels for 27 months. 

ABV: 14.4% | TA: 5.36 g/L | pH: 3.91 | RS: 0.715 g/L

Serve at 59°F | Decant for 30 minutes

Food Pairing

salt-cured pork, burnt ends, twice-cooked pork, or a classic and juicy burger with Cheddar cheese.

The Vineyard

AVA: Texas Hill Country

In 2016, Doug Wilcox planted 12 acres of grapes near Hye, Texas, in the Texas Hill County AVA. The Texas hill Country is the largest designated grape-growing region in Texas spanning 9 million acres, and is home to some of the oldest soils in the United States.  

Elevation: 1,516 ft. Soil type: Clay loam over limestone. Age of vines: 5 years.
