Tasting Notes
Cherry jam, pure red plum, wild strawberry, and passion fruit notes play around on the nose in a fruit-punch style impact! Playful at first, then the palate jumps out as salty with a watermelon and cherry wave backed by a slow heat and balanced by a subtle, fruity sweetness.
Winemaking
Varieties: 100% Syrah
Fermented in large oak foudre for 9 days. Aged for 29 months in 10% new French oak barriques and 90% neutral French oak barriques.

The Vineyard
Originally planted in 1987, the vines at Dell Valley Vineyard are thick and deeply rooted in the sloped sandy, caliche-type soils of West Texas. Sitting outside of any currently designated American Viticultural Areas, or AVA, this vineyard is mightily tended by Phillipe, whose experience with growing grapevines began at an early age on the French island of Corsica.
Elevation: 3,650-5,000 ft. Soil: Sandy loam over caliche soil. Age of vines: over 10 years.
