Winemaking

Varieties: 58% Cabernet Sauvignon, 34% Malbec, 8% Merlot

All wines were fermented in an oak fermenter for an average of 11 days. Aged in 25% new French oak barrels for 8 months, racked, blended and aged for an additional 9 months in oak barrels.

AVA: Texas Hill Country

Vineyards: Fovel Family Vineyard, Blackmon Ranch Vienayrd, Uplift Vineyard, Hog Heaven Vineyard

The Texas Hill COuntry is the largest of the eight American Viticultural Areas of Texas, spanning 9 million acres. With diverse soil types and bedrock, including both limestone and granite and varying elevations, the potential for this region is magnificent as long as the varieties planted are resilient against the Hill Coutnry's signature warmth and humidity.

Soil Type: Highly varied - decomposed granite, sandstone, sandy loam over clay, poor shallow soils
Age of Vines: Average 7-10 years
