Tasting Notes
Like a rhubarb and cherry pie, with flaky pastry and vanilla bean notes woven between aromas of wild strawberry, dried roses, and damp potting soil. The palate is a forward explosion of strawberries with a tart through-line that balances a lush and full body.
Winemaking
Fermented in 50hl oak fermenter for 9 days. Left on skins to macerate for 24 days. Aged in 10% new French oak barrels, 5% new Eastern European oak barrels, and 85% neutral oak for 19 months.
Food Pairing
Smoked venison steak with smoked sherry sage butter or boar with cherry agrodolce.

In 2010 the Seaton & Furgeson brother and sister-in-law combo planted 30 acres of grapevines to add to their collection of acres dedicated to cotton, grains, pumpkins, melons and more. Dedicated to warm climate grape varieties, the 8 generations who are currently farming this land in the Texas High Plains champion the idea of wine as a heavily farmed product of honest labor.
Elevation: 3,300 ft. Soil: Amarillo fine sandy loam. Age of vines: 11 years.
