Tasting Notes

A wild rosé with aromas of red currant and bramble notes accompanied by stone and lilies. There is an element of black cherry pit that is surprising. The palate is as wild as the nose, with a spritz-y effervescence and a textured dryness.

Winemaking

Stainless steel tank fermented for 21 days. Aged in concrete egg for four months. 

Food Pairing

gamey meats or roasted root vegetables. Also, charcuterie with cheeses and pickled veggies!

La Pradera Vineyards

Owned by Mike and Barbara Paddack and Andy and Lauren Timmons, who also own the 18 acres of Timmons Estate Vineyard in the same County. The over 100 acres of vines at La Pradera are planted on a special soil combination: calcareous, organic, Amarillo sandy loam soil over limestone. Both sites are dedicated to grapes that can grow sustainably in the semi-arid conditions of the Texas High Plains.

La Pradera Vineyard, Terry County, Texas High Plains AVA. Age of Vines: 13 years. Soil Type: Amarillo fine sandy loam over limestone base. Elevation: 3,300 feet.
