Tasting Notes

Aromas of ripe strawberry, with compote-like concentration, potpourri, potting soil, and brown sugar. The wine is equal parts fresh and deep. The palate is fruity with a medium body, soft-but-present tannins, and a tart fruit finish that lingers into earthiness. Dry.

Winemaking

Varieties: 55% Mourvèdre, 15% Petite Sirah, 11% Cabernet Sauvignon, 10% Petit Verdot, 9% Carignan

Fermented in separate lots in a combination of oak barrels, stainless steel tank, and concrete. Aged 20 months in 15% new French oak barrels, 5% new E. European oak barrels, and 80% neutral and second-use French oak barrels. Blended 3 months prior to bottling to integrate. 

ABV: 13.6% | pH: 3.76 | TA: 6.80 g/L | RS: 0.50 g/L 

Food Pairing

Spicy dishes and alpine cheeses - Indian curries, Gruyère, and mushrooms or escargot in butter.

The Vineyard

AVA: Texas High Plains 

Established in 2010 by Mike and Barbara Paddack with the help of Texas grape-growers Andy and Lauren Timmons, who also currently manage the 120 acres. The 13 different grape varieties are planted on a special soil combination that is calcareous, organic, sandy loam over limestone that is just 2-3 feet deep in some blocks. The wines are aromatic and fresh in style. 

La Pradera Vineyard, Terry County, Texas High Plains AVA. Age of Vines: 13 years. Soil Type: Amarillo fine sandy loam over limestone base. Elevation: 3,300 ft.
